Analysis of lipid oxidation and phospholipid hydrolysis pathways revealed that air-fried BET exhibited slower rates of heat transfer and lipid oxidation compared to roasted and boiled BET. Multivariate REIMS data analysis, encompassing discriminant analysis, support vector machines, neural networks, and machine learning models, was used to characterize differences in lipid profiles across various cooked BET samples. Key contributors, including FAC226, PL183/226, PL181/226, and other variables, played a prominent role in defining the distinctions between the different cooked BET samples.
